Nut Bites

We could all use a quick snack to grab and go with right? Without all of the added sweeteners the store bought nut bars have. 

We could also all use some more ways to add in healthy fats to our daily nutrient intake! 

Homemade nut clusters/bites for the absolute win this week... like... I wasn’t expecting it to taste as amazing as it did! And it only took a little while to make.

This recipe was so simple to make and will last you a couple of weeks. I like making small bites like this so I know portion wise what I should eating instead of taking handful after handful with calories adding up!

Here’s what I chose to use: you can choose any combination of nuts and seeds you’d like!

1 cup pecans 

1/2 cup pepitas 

1/2 cashews 

1/8 cup flaxseed 

1/4 cup shredded coconut 

1/4 cup dried cranberries 

1/4 cup maple syrup 

1 tsp vanilla extract 

Instructions:

Preheat oven to 325 degrees. 

First, choose your nuts and seeds and dried fruit of choice. 

Second, measure nuts/seeds out into a small food processor (or blender) and slightly grind them up.

Third, pour nuts into a bowl and add dried fruit, shredded coconut, maple syrup, and vanilla. Stir it up!

What I did for the baking pan was use little bite sized squares. However, I know not everyone as that as an option so see below for alternative!

Baking squares: spray each holder with a non-stick spray and fill each one with a little bit of nut mix. 

If you don’t have baking squares: line an 8x8 baking pan with parchment paper. And spread mix out evenly.

Bake for 35 minutes and let sit for 30 minutes before removing from the pan. If you are using the squares, you should be able to just pop them out and if you are using the 8x8 pan, cut into squares. 

Mine made 24 small squares which should last me a while… unless my mom decides she needs to help herself too;)
